gaga's baked pineapple

If you are looking for something unique to put on the table this Thanksgiving to compliment all your traditional dishes, I recommend you try this!
My great-grandmother made this casserole every Thanksgiving and Christmas, so it's a classic on the table at our house. She lived to be 93 years old and was healthy and energetic for 92 of those years, so the "olea" and such it calls for can't do too much harm!


Gaga's Baked Pineapple
taken from a southern cookbook where she had it published

2 (20 oz.) cans chunk pineapple, drained (save juice)
2 cups medium cheddar cheese, shredded
1/2 cup flour
1/2 cup sugar
2 cups crushed Ritz crackers
1 stick oleo

Put pineapple in a 11x7 baking dish. Pour a little juice to cover bottom of dish. Mix flour, sugar and cheese. Sprinkle over pineapple. Mix Ritz crackers and melted margarine. Sprinkle over top. Bake at 325 for about 30 minutes or until hot and bubbly.

  3. Oleo?!! That's what my mom used to call it too! You hardly ever hear anyone call it that now :)
