green bean superb: a favorite

I could have titled this one How to Make Fresh Green Vegetables Fattening :)


You will need:
1 lb of fresh green beans
1 T minced shallot (optional)
2 slices bacon (not optional)
1 t apple cider vinegar (white vinegar works too)

Saute bacon, adding shallots the last minute or so. Remove bacon from pan, reserving grease and shallots. Saute green beans in bacon/shallot grease for about 4 minutes. Mix in cider vinegar. Crumble bacon and toss with green beans. Serve immediately.

  2. I sometimes fix green beans like that and they are wonderful. My mother put bacon in the beans and then boiled them to mushy. Yuck! I never knew how tasty green beans were until I left home.
