garlic-almond shrimp supper

Healthy ingredients. Unique flavors. Easy preparation.
This is one of Husband's favorites.
You will need:
1 pound fresh shrimp, shelled
8 oz. sliced white mushrooms
1 bunch green onions, chopped
1 large clove of garlic, minced
1/2 t salt
1 t ground ginger
6 oz bag shelled, frozen edamame
4 servings of cooked brown rice
3/4 cup whole almonds or walnuts, toasted
2 oranges, sectioned into bite size pieces


Cook the rice. Saute the mushrooms in light oil. Add onions and shrimp after about 3 minutes. Add garlic, salt, and ginger after about 3 minutes. Add frozen edamame. Put the lid on the pan, the heat on low, and let it sit and simmer, producing juices.
Toast the almonds and section the oranges.
Pile rice onto plates. Pile on shrimp mixture. Put orange sections on top. Sprinkle with almonds or walnuts. Serve with soy sauce if you like. We like ours without it!
