meet super cereal

My newest uncle took this photo of his breakfast with his cell phone!
I thought it looked so delicious, I had to share. It has
cherries, peaches, blueberries, two kinds of whole-grain and granola cereal, wheat germ, walnuts, cinnamon, vanilla soy milk, and low fat regular milk.
I bet he feels great after eating this... and I bet my aunt is the inspiration behind it! She is the author of what I call "super cereal" because when I have it for breakfast, I want to go save the world from all the nesting evils that lurk and threaten... like fast food biscuits and soft drinks. It just makes you feel unbelievably productive, energetic, clear-minded, and altogether good.
("Super Cereal" is very similar to the above medley.)

grilled nectarine and prosciutto pizza

Have you ever grilled a pizza?

Have you ever grilled a pizza with fresh fruit on it?

This has been one of our summer favorites for the last several years.
It's different, healthy, EASY, and delicious.


The recipe is from Eating Well.
I use feta instead of blue cheese crumbles, and I buy a pre-made whole wheat pizza crust instead of rolling one out from dough. This way, you can skip steps 3 & 4 altogether.

eat your asparagus, folks


We tried this recipe last night. It's from Food and Wine magazine. I was surprised at how much I liked it. There is no cooking involved, so you are getting all the benefits of raw asparagus.
And here is a more fruity way to eat shaved, raw asparagus. It looks delicious!

blue cheese quesadillas with peach salsa

This is a light and healthy summer favorite 'round here!
It came from a cookbook my MIL gave me: Betty Crocker's Cooking for Two. The recipe below is slightly different from the one in the book, but the gist is the same.

Blue Cheese Quesadillas:
For 4-6 supper sized servings or for 10-12 appetizer servings
1 cup shredded Monterrey Jack cheese
1/2 cup light cream cheese
1/2 cup walnuts, chopped and toasted
2 green onions, diced
1/4 cup blue cheese, crumbled
Flour Tortillas

Mix together all cheeses and green onions and spread over half of each tortilla. Sprinkle cheese mixture with walnuts. Fold the tortillas over halfway and bake at 350 for 10-15 minutes or until the outsides get crisp and lightly browned.


Peach Salsa
about 2 cups chopped peaches from a jar or fruit cups (drain most of the syrup)
1/2 large red bell pepper, diced
2 green onions, chopped
the juice of one grapefruit
fresh cilantro or basil, if desired

Mix all ingredients together and serve with tortillas. I pile mine right on top of the hot, crispy tortilla.

101 ways to eat salmon: #2

Parmesan Crusted Salmon
This is a good one I discovered through my mom. Even folks who aren't necessarily crazy about salmon might appreciate it. Find the printer-friendly version here.

For "seasoned salt" I have used Toni's Creole Seasoning and Jane's Crazy salt (I know she spells it KRAZY, but I can't bring myself to thoroughly and purposefully butcher spellings with no pun or motive whatesoever).
